A line is never edited or deleted. A mistake is reversed by a second line with the opposite sign pointing at the first, so both stay visible and the sum stays honest without anybody having to trust it.

Take a booking
Only vacant rooms that have been cleaned are offered. The overlap check runs again inside the transaction with the room locked, because a list drawn a minute ago is not a promise.
Pick a room, or leave it on "any room of the type" and sell the category — which is how hotels sell, and the only way an overbooked allotment has somewhere to live until somebody assigns a room. Leave the rate blank to take the rate plan's price, resolved for each night separately: a week that crosses a season boundary is not one number. Whatever is agreed is snapshotted onto the stay and never looked up again.
Every room
Two states, kept apart: whether it can be sold, and whether it has been cleaned. A room can be occupied and clean, or vacant and dirty, and one column would have to invent an order between them.
